  1. How to bake puff pastry?
    • Puff pastry should be kept cool at all times for easy handling. Remove from refrigerator when ready to use. Roll out on a lightly floured surface. Cut into desired shape, fill on one side with prepared (cooked) filling. Wet edges with water or beaten egg and press closed.

      Bake right away or refrigerate/freeze until ready to bake.

      Bake on a baking sheet in a preheated 205° C (400° F) oven until golden brown.
  2. How long can I freeze the pastry dough?
    • Up to 3 months in a plastic freezer bag.
  3. Does the Puff Pastry contain any animal products?

    • Yes we do! Minimum $10 purchase.
  7. How to roll out pizza dough?
    • Dina's Way- Dina is our afternoon cashier. After a busy day at work she has come up with this quick and easy way to roll out our pizza dough and is happy to share with you.

          • Pre heat oven to 150 F (60C).
          • Coat bottom of 13x18 inch baking sheet with olive oil.
          • Take dough out of bag and put on tray.
          • TURN OFF OVEN.
          • Put in oven for approximately 10 minutes to warm up dough.
          • When dough is warm take tray out of oven and press out dough with
            hands.
          • Turn oven back on to preheat to 400 F.
          • Add your favourite toppings, bake and enjoy!

      Nalini's Way- Nalini is our morning store supervisor. She likes thin crust pizza, and rolls the dough out traditionally.

          • One pizza dough makes two thin crust pizzas.
          • Put dough on floured counter and cut in half.
          • Gently form into two disks.
          • Dust with flour and push/spread the dough with your hands to form two 7-8
            inch round disks.
          • Rest dough for 10 minutes.
          • Roll gently from the middle outward until dough reaches desired shape and
            size.
          • If dough springs back, let it rest for another 5-10 minutes.
          • Add your favourite toppings, bake in preheated oven at 450 F about 12 min.
            and enjoy!.
  8. Why can't you slice the hot bread?
    • Hot bread, fresh from the oven, has a high moisture content inside which results in the bread sticking to the knife. Since the crumb structure inside the bread has not stabilized yet, any attempt to slice it will mush up the bread inside.
  9. How much salt?
    • Our products have in general a 1% -1.5% salt content. Approximately 1 to 1½ teaspoon per loaf of bread. Unless otherwise noted (e.g. "sugar free", "salt free").
  10. Do you have yeast free products?
    • Yes, our sourdough bread has no commercial yeast added. It has a natural sourdough culture as fermentation agent.
  11. Can we freeze the products?
    • Yes, in general all baked products can be frozen. The exceptions are products with salt toppings since the salt would capture the moisture from the air and dissolve into the product.
  12. How can I buy gluten free products?
    • Order by Wednesday before 5 PM at the store or via phone or voice mail.

      Rice-bread is produced every Thursday and available for pickup after 2 PM.
  13. What is sunflower lecithin (found in some of Montmartre products)?
    • Sunflower lecithin has allowed us to switch from a solid fat to liquid canola oil and still give us a good tasting bread with no change in taste. This natural emulsifier is free from allergens, Kosher certified, non-GMO and organic compliant.
